Vegetarian Seaweed Fish

I bought this product from one of the supermarkets. Another product with a “Healthier Choice” Logo from Health Promotion Board.

The ingredients are seaweed, soya bean curd skin, salt, sugar, sesame oil. No preservative!

I am getting lazy nowaday and want something hassle-free. I just do a quick thaw, brush some olive oil on it and toasted in my oven toaster. Next, just cut into smaller pieces using a pair of scissor or knife.

Toasted Vegetarian Fish with Breadcrumbs

This is a recipe inspired by Chow Vegan’s Crispy Baked Tofu @ Crispy Baked Tofu. I used vegetarian fish slice instead, which does not required any marinate. I used batter instead of egg to ‘hold’ the breadcrumbs. I added some oil in the batter and breadcrumbs, as I do not have any oil spray.

Preparation: 5 mins, Cooking time: 15 mins

Ingredients (makes 2)
° 2 slices vegetarian fish
° 20g breadcrumbs
° 1½ teaspoons olive oil
° ¼ teaspoon spice salt
° 1 teaspoon self-raising flour
° 1 tablespoon water

Method
1. Combine breadcrumbs, 1 teaspoon of olive oil, spice salt a bowl, and mix well. Set aside.
2. Combine flour, water, and ½ teaspoon of olive oil. Mix well to form the batter.
3. Spread the batter evenly on the vegetarian fish slices and coated well with breadcrumbs.
4. Grease a baking tray with oil and place the vegetarian fish slices on it. Toast or baked for 15 minutes or until it is golden yellow. Turn them over halfway.
5. Serve hot with chilli sauce or dipping sauce.

Vegetarian Assam Sambal Fish

This is a delicious Malay dish.

Preparation: 10 mins, Cooking time: 10 mins

Ingredients (serves 4)
° 4 (100g) vegetarian fish slices, pan-fried or toasted or baked
° 2 tablespoons oil
° 2 (100g) tomatoes, peeled and blended
° ¾ tablespoon assam/tamarind paste, knead with 100ml hot water and strained
° ½ teaspoon salt, or to taste
° black sugar or sugar, or to taste
° 2 kalamansi limes

Sambal Paste
° 2 lemongrass and 25g ginger or 15 shallots, chopped
° 6-8 dried chilli, soaked and chopped
° 4 candle nuts, chopped
° 1 teaspoon vegetarian belacan

Method
1. Grind the sambal paste ingredients until fine and set aside.
2. Heat oil in a wok or frying pan. Add the sambal paste and fry over low heat for 3 minutes or until thickened and fragrant. Add the tamarind juice, tomatoes puree, salt, sugar and stir fry for 2-3 minutes.
3. Add the vegetarian fish slices and stir well to ensure the vegetarian fish slices are coated with the sambal paste.
4. Dribble lime juice and serve immediately.

Stir-Fried Tom Yum Vegetarian Fish

This is real simple to cook. The vegetarian fish slices can be deep fried or pan fried, if desired. Sugar and light soy sauce are omitted unless you want to add these. Squeeze some lime juice if you prefer it to be a little tangier. Few pineapple cubes or slices of star fruit can be added.

Preparation: 5 mins, Cooking time: 5 mins

Ingredients (serves 2)
° 2 (100g) vegetarian fish slices
° 1 tomato, cut into 6-8 wedges
° 1 stalk lemongrass, peel off outer layers leaving tender whitish centre, cut out 5cm or sliced, bruised
° 3-4 kaffir lime leaves
° 1 tablespoon olive oil
° 1 thin slice ginger, finely chopped
° 1 tablespoon vegetarian tom yum paste
° 50ml water
° ½ fresh red chilli (optional) , finely shredded
° a small handful fresh coriander leaves (optional), for garnish
° 1 kalamansi lime (optional)

Method
1. Heat the oil in a wok. Add the ginger, lemongrass and lime leaves fry till fragrant.
2. Throw in the tomato and stir fry for 1-2 minutes. Stir in the tom yum paste and water. Add in the vegetarian fish slices and stir fry till the gravy is slightly thickened.
3. Discard lemongrass and lime leaves, if desired. Garnish with coriander leaves, chilli, kalamansi lime and serve hot.

Vegetarian Fish Curry

Vegetarian Fish Curry is simple vegetable curry with vegetarian fish added which can be optional. It is spicy and taste a bit sour and either served as a side dish or with rice as a light lunch.
Preparation: 15 mins, Cooking time: 15 mins

Ingredients (serves 2-3)
° 2-3 (100-150g) vegetarian fish slices, pan-fried
° 100g egg plant, sliced
° 2 tomatoes, quartered
° 4 lady’s finger/okra, trimmed and cut into section
° 1 fresh red chilli, seeded and cut into section
° 1 fresh green chilli, seeded and cut into section
° 4 small beancurd puffs (optional)
° 1 stalk lemon grass, peel off outer layers leaving tender whitish centre, cut out 5cm
° 1-2 sprigs curry leaves
° 1-1½ tablespoon curry powder (fish blend)
° 1-½ teaspoon chilli powder
° 2 tablespoons oil
° 50ml coconut milk
° 250ml water
° ¾ teaspoon assam paste, knead with 1 tablespoon water and strained
° salt and sugar, to taste
° 1 shallot (optional)
° 1 clove garlic (optional)
° ½ teaspoon vegetarian belacan (optional)
° 2 candlenuts

Method
1. Grind shallot, garlic, vegetarian belacan, candlenuts into fine spice paste and set aside.
2. Mix the curry powder and chilli powder with a tad of water to form curry paste and set aside.
3. Heat oil in a pot or wok, fry the spice paste until fragrant. Add in the curry paste and fry over medium heat until fragrant.
4. Add in the water, lemon grass, curry leaves and egg plant. Bring to a boil and simmer for 5-10 minutes until the eggplants are slightly tender. Add in tomatoes, chilli, beancurd puff, lady’s finger and simmer for 3-5 minutes. Stir in coconut milk and assam juice. Season with salt, sugar and bring to a boil.
5. Lastly, add in the vegetarian fish slices and serve immediately with rice.

Steamed Vegetarian Fish

This easy steamed dish without much work and is ideal for busy people who have little time to spare.

Preparation: 7 mins Cooking time: 8 mins

Ingredients (serves 2-3)
° 2-3 (100-150g) vegetarian fish slices
° 1 tomato, cut into 6 wedges
° 2-3 thin slices ginger, finely shredded
° 1 preserved sour plum (optional)
° ½ fresh red chilli (optional), seeded and finely shredded
° 1 tablespoon vegetable oil
° ½-1 teaspoon light soy sauce
° a small handful fresh coriander leaves, for garnish

Method
1. Arrange the vegetarian fish in a heatproof serving plate. Drizzle oil, soy sauce and scatter plum, ginger and tomato over the plate. Steam for 8 minutes.
2. Garnish with coriander, chilli and serve immediately.

Tip
1. Thin slices of silken tofu and cooked Chinese dried mushrooms can be scattered before steaming, if desired.

Deep-fried Vegetarian Fish with Ginger

Preparation: 5 mins Cooking time: 5 mins

Ingredients (serves 2-3)
° 2-3 (100-150g) vegetarian fish slices
° 4-6 thin slices ginger, finely shredded
° 2 cloves garlic (optional), finely chopped
° oil, for deep-frying
° ½-1 tablespoon dark soy sauce

Method
1. Heat oil in a deep-fryer or wok. Place the vegetarian fish slices in and then fry until golden brown. Drain well on kitchen paper and set aside.
2. Remove oil from the wok and leave only 1-2 tablespoons oil. Add the ginger, garlic and fry till slightly golden brown. Drizzle ginger and garlic over the fish slices. Serve immediately.
